Check for flatness   by rotating a ruler across the bottom of the cookware (See   Figure 2). Be sure to follow the recommendations for using   cookware as shown in Figure 1.   Woks with flat bottoms suitable for use on your cooktop   are available in most cookshop or hardware stores   (Figure 3). Round-bottomed woks (with a support ring   that does not extend beyond the burner circumference)   may also be used. The metal ring was designed to   support the wok safely when it is filled with large   amounts of liquids (soup making) or fat (frying).   Note: The size and type of cookware used will influence   the setting needed for best cooking results.   Wire trivets: Do not use wire trivets. Cookware bottoms   must be in direct contact with the grates.   Note: Always use a utensil for its intended purpose.   Follow manufacturer’s instructions. Some utensils were   not made to be used in the oven or on the cooktop.   caution   correct   incorrect   DO NOT use two burner units to heat one large pan such   as a roaster or griddle, or allow cooking utensils to boil   dry (Figure 4). The bottom surface of the pan in either   of these situations could cause discoloring or crazing of   the appliance cooking surface, and damage to the grates   and burner units.   • Curved and warped pan   bottoms.   • Flat bottom and   straight sides.   • Pan overhangs burner grate   by more than 2.5 cm (1”).   • Tight fitting lids.   • Weight of handle   does not tilt pan.   Pan is well balanced.   • Pan sizes match the   amount of food to be   prepared.   • Made of material   that conducts heat   well.   • Heavy handle tilts pan.   • Flame extends beyond pan.   • easy to clean.   Figure 3   Figure 4   Figure 1   DO NOT use a wok if it is equipped with a   metal ring that extends beyond the burner   circumference. Because this ring traps heat,   the surface unit and cooktop surface could be   damaged (Figure 5).   * Specialty pans such as lobster pots, griddles and pres-   sure cookers may be used but must conform to the   above recommended cookware requirements.   Figure 2   Figure 5   6 SUrFACe COOKING   canning tiPs & inFormation   1. Use tested recipes and follow instructions carefully.   Check with your local Cooperative Agricultural   Extension Service or a manufacturer of glass jars for   the latest canning information.   2. Use flat-bottomed canners only. Heat is spread more   evenly when the bottom surface is flat.   caution   Canning can generate large amounts of steam. Use   extreme caution to prevent burns. Always raise the lid   to vent steam away from you.   3. Center canner on the burner grate.   Prevent damage to cooktop and burner grates:   1. Do not use water bath or pressure canners that   extend more than one inch beyond the edge of the   burner grate.   2. Do not leave water bath or pressure canners on   high heat for an extended amount of time.   3. Alternate surface units between each batch to   allow the units and surrounding surfaces to cool   down. Try to avoid canning on the same burner   unit all day.   4. Start with hot water and a high heat setting to   reduce the time it takes to bring the water to a boil;   then reduce the heat setting as low as possible to   maintain a constant boil.   5. It is best to can small amounts and light loads.   Safe canning requires that harmful micro-organisms are   destroyed and the jars are sealed completely. When   canning in a water bath canner, a gentle but steady boil   must be maintained continuously for the required time.   7 setting surFace controls   setting ProPer surFace Burner   Flame siZe   caution   For most cooking - start on the highest control setting   and then turn to a lower one to complete the process. Use   the recommendations below as a guide for determining   proper flame size for various types of cooking. The size   and type of utensil used and the amount of food being   cooked will influence the setting needed.   do not operate the burner for an extended period of   time without cookware on the grate. The finish on the   grate may chip without cookware to absorb the heat.   oPerating tHe gas surFace controls   Your appliance may be equipped with any combination of   the following burners:   simmer burner, this burner is best used for simmering   delicate sauces, etc.   standard burner, can be used for most all surface   cooking needs.   large burner, the larger burner is best used when   bringing large quantities of liquid to temperature and   when preparing larger quantities of food.   Regardless of size, always select a utensil that is suitable   for the amount and type of food being prepared. Select a   burner and flame size appropriate to the pan. Never allow   flames to extend beyond the outer edge of the pan.   Each burner lights automatically from an electric ignitor   each time a control knob is turned to the lite position.   For deep fat frying - use a thermometer and adjust the   surface control knob accordingly. If the fat is too cool, the   food will absorb the fat and be greasy. If the fat is too hot,   the food will brown so quickly that the center will be under   cooked. Do not attempt to deep fat fry too much food at   once as the food will neither brown nor cook properly.   *Flame size type of cooking   High Flame   Start most foods; bring water to a boil;   pan broiling.   Medium Flame Maintain a slow boil; thicken sauces,   gravies; steaming.   Low Flame   Keep foods cooking; poach; stewing.   to operate the surface burner:   1. Place cooking utensil on burner.   2. PushinandturntheSurfaceControlknobtoLITE.note:   Allelectronicignitorswillclickatthesametime. However,   only the burner you are turning on will ignite.   3. Visually check that the burner has lit.   4. After the burner lights, turn the control knob to the   desired flame size. The control knobs do not have to be   set at a particular mark. Use the guides and adjust the   flame as needed. DO NOT cook with the control knob in   the LITE position (The electronic ignitor will continue   to click if left in the LITE position).   correct   incorrect   imPortant   Never extend the flame beyond the outer edge of the   utensil. A higher flame simply wastes heat and energy,   and increases the risk of being burned by the gas flame.   5. To turn the burner off,   turn the control knob as   far as it will go, to the   OFF position.   note   *Note: Settings are based on using medium-weight   metal or aluminum pans. settings may vary when   using other types of pans. The color of the flame is the   key to proper burner adjustment. A good flame is clear,   blue and hardly visible in a well-lighted room. Each cone of   flame should be steady and sharp. Adjust or Clean burner   if flame is yellow-orange. To clean burner, see instructions   under general cleaning.   note: The control knob   shown is typical only.   Figure 1   imPortant   caution   In the event of an electrical power outage, the surface   burners can be lit manually. To light a surface burner,   hold a lit match to the burner head, then slowly turn   the surface control knob to LITE. After burner lights   turn the knob to desired setting. Use caution when   lighting surface burners manually.   do not place plastic items such as salt and pepper   shakers, spoon holders or plastic wrappings on   top of the range when it is in use. These items could   melt or ignite. Pot holders, towels or wood spoons could   catch fire if placed too close to a flame.   8 care & cleaning (cleaning chart)   CLeANING VArIOUS PArTS OF YOUr COOKTOP   Before cleaning any part of the cooktop, be sure all controls are turned OFF and the cooktop is COOL. To clean, soak the burners in a 1:1 solution of ammonia and water for   30 to 40 minutes. For stubborn stains, scrub with soap and water or a mild abrasive   cleanser and damp cloth. Dry the burners thoroughly in a warm oven for 30 minutes.   Then replace them, making sure they are seated and level. do not wash burner   units in the dishwasher.   9 care & cleaning   To Clean the Burner Grates- Be sure burners and   grates are cool before you place your hand, a pot   holder, cleaning cloths or other material on them. The   cast iron burner grates can be washed in hot soapy   water. Rinse thoroughly and dry the grates with a cloth -   don't put them on the cooktop while still wet. Be sure the   grates are positioned securely over the burners.   To remove burned on food, place the grates in a covered   container or plastic bag. Add 1/4 cup ammonia and soak for   30 minutes. Wash, rinse well and dry. An abrasive cleaner   can be used for stubborn stains.   CLeANING THe COOKTOP, BUrNer CAPS   & grates   The cooktop is designed to make cleaning easier. Because   the gas Burners are sealed, cleanups are easy when   spillovers are cleaned up immediately.   The cooktop, Burner Heads and Caps should be routinely   cleaned. Keeping the Burner Head Ports clean will   prevent improper ignition and an uneven flame. Refer to   the following instructions:   imPortant   THe COOKTOP IS NOT reMOVABLe. Do not   attempt to remove or lift the cooktop.   caution   Pay attention to not damage electrodes. Damaged   electrodes may cause a delayed ignition or prevent the   burner from igniting.   Burner grate can appear in different shapes.   to clean the cooktop and contoured areas of the   cooktop- If a spill occurs on the porcelain cooktop,   blot up spill with an absorbent cloth. Rinse with a clean,   damp cloth and wipe dry. Do not use harsh abrasive   cleaners on the cooktop.
